This week Downtown Plano’s cutest café opened its Pretty Pink doors to the public. With bright pink hearts with letter “XO” on the windows and cute signs on the exposed brick walls, the place is cozy and perfect for dates with your sweetheart or a quick coffee break. Plano was definitely in need of some cute coffee shops. Linda McCall, who owns XO with her husband, David Martin, is an interior designer by trade and became infatuated with coffee when studying abroad in Barcelona. “It’s an emotional experience; it makes you feel good to have that really great coffee experience.” says McCall and we couldn’t agree more!
We were welcomed with pink champagne by the friendly staff on their opening day. They had tunes playing while guests were mingling and tasting the coffee and treats. XO’s specialties are their house-made syrups and pour over coffee, they also serve breakfast burritos and tacos, omelets and other wonderful salads and sandwiches for lunch. Their baked items like blueberry waffles or raspberry chocolate cake are hard to resist.
Owners Linda and David found the location a year ago on Valentine’s Day and fell in love with the space. While renovating the building, they found items from the shop’s past – the original water well, pieces of fabric, glass bottles, an old knife and a toothbrush that was fossilized, to name a few. Linda display some of these items in a shadow box as a reminder of what XO Coffee Company used to be.
Coffee and the pink espresso machine are the stars of the show, at XO Coffee Company but they also serve hot chocolates for kids, XO Soda that combines cream, soda water and house-made raspberry syrup for a drink that is sweet and tart and a few other non caffeined beverages.
